Speakeasy Ales and Lagers is happy to introduce Scarface Imperial Stout. A complicated brew – behind its fiercely black exterior is a mélange of subtly different roasted malt flavors that add nuance and depth to a style of beer that is too often heavy and one dimensional. To add a bit of roundness to the flavor we diverted about 20% of the brew into our Heaven Hill bourbon barrels, one of which we topped up with cacao nibs from our friends at local San Francisco organic chocolate makers, TCHO, for a period of oak-aging before blending it back into the primary batch. This is a special beer that reveals a little something different about itself every sip. Malts: American 2-row, Belgian Dark Caramel, French Coffee Malt, Chilean Black Malt and English Roasted Barley Hops.

In addition to fermentation with an ale yeast, Berliner Weisse is traditionally fermented with lactic cultures to produce its acidic or green apple-like character. It is delicately hopped with a pale straw color and served as an aperitif or summertime quencher. To soften the intense sourness, natural peach sugars are eaten by the yeast, and there is a fruit complexity woven into both the aroma and the taste of this beer.

Pours a shiny copper color with some light haze. Filmy white head. Aroma is light with some spicy citrus. The flavor is milder, with some nice malt undertones, spicy hops, and hints of pine and grapefruit. Not too strong, but fairly flavorful. There's some light bitterness in the finish and aftertaste. Light- to medium-bodied with light but very present carbonation.

This brew is the result of the long friendship of Brooklyn brewmaster Garrett Oliver and Schneider brewmaster Hans-Peter Drexler. Garrett had always admired the delicate balance of flavors in Schneider Weisse, while Hans-Peter had long enjoyed the effusive hop character of Brooklyn East India Pale Ale and BLAST! Garrett's concept for the collaboration was that each brewmaster would brew essentially the same pale, hoppy weissbock in the other's brewery, but with different hopping to reflect the local hop flavor.
